Ingredients
- 1 cup soft or medium tofu
- 1 cup soft or medium tofu
- 1/4 cup canola or olive oil
- 2 tbsp. apple cider vinegar or lemon juice
- 1 tsp. Dijon mustard
- 1 tsp. onion powder
- 1/2 tsp. salt
- 1 tsp. sugar (optional)
- White pepper to taste (optional)
Combine all ingredients in blender or food processor until smooth. Makes about 1 1/2 cups. Note: This mayonnaise can also be used as an egg replacement in some recipes.
